The Easter Bunny stopped by The Acre this week. Just like everybody else, we imagine?
The 'rona is slowing down family gatherings, but we still do the fixings. We enjoy cooking together, entertaining family or not. Lawman fired up the smoker and smoked the ham.
Cupcake made her soon to be world famous corn pudding. The big ticket item was a lemon pound cake. We have a whole bunch of duck eggs now, they don't move very well at the egg stand, which is the worlds loss. If you're baking and not using duck eggs, you're doing it wrong. Anywho, Cupcake found a recipe she wanted for Easter and made it we did.
Fresh lemons, zest and juice |
A pound of butter |
Duck eggs |
Lemon cake is "The Boy's" favorite, so it was nearly gone by the end of the day.
A new dish we tried this week was crab cakes. Crab is a big deal in the People's Republic, but Lawman never acquired a taste for them and didn't really have a common point of reference for how to fix them. Cupcake saw lump crabmeat at the local Food City and wanted crab cakes, so crab cakes is what she got.
As is tradition around The Acre, it warmed up enough for fruit trees to bloom, and then we got two nights of deep freeze. This usually kills all the fruit blooms, but we think we may have dodged the bullet. The wind blew enough to save them, we guess. The blooms are still on the trees. Our fingers are crossed, because we love us some plums and the plum trees were in full bloom.
We ended the week with ham biscuits. And a nap.K&K
