No Cuts, No Butts, Dos Coconuts

 This week was prep work for Christmas. Our lead off thing this week is a blast from both of our pasts. Apparently, both of our grandmothers would make a coconut cake for Christmas. When Lawman was a young lad, he would help out with prepping fresh coconuts. Draining, baking, grating. We saw some fresh coconuts and decided it was time to get old school. 

We see why our grandmothers would limit the size of a slice of the cake. It took all day to bake.



After we got them baked and cracked, we peeled the skin off and had fresh coconut meat. We used the food processor to grate it. Where was this thing 50 years ago?


We baked the cake from scratch, using our new arrived eggs from the slacker birds.
Cupcake was gifted a bottle of home made vanilla, so we used it for the cake and custard.
We used the whole bottle, so we refilled it and hope it's ready for next holiday season.

The frosting was sugar/cream cheese mix, and we used the rest of the shredded coconut to sprinkle on it.
And paying homage to Cupcake's grandmother, a fresh batch of boiled custard with the rest of our fresh eggs.

It's a shame "The Outlaw" is bat shit crazy, apparently this is his favorite?
Christmas snacking, we have two kinds of snack mix. Chex and Golden Grahams.


A new item this week. Pumpkin donuts.


"The Boy's" birthday was also this week. He asked for home made oatmeal cakes and a fresh pizza. 




It wouldn't be Christmas without Cupcake's home made cheese ball. She knocked this one out of the park.


We ended the week with wings. And coconut cake with boiled custard. And a nap.
